Pork Menudo Recipe


Menudo is a common dish made with pork meat and liver cooked in tomato sauce seasoned with salt and pepper. The simplest way of cooking is mixed with carrots and potatoes. To make it more special, some added bell pepper, hotdogs, and raisins.

Menudo is common served in karinderyas and often present in potlucks because the ingredients used in the dish are cheap and readily available in the markets.

Our son loves menudo, especially because of it's appetizing smell. Sabi nga, amoy handaan daw kapag may menudo.

Menudo Recipe

Ingredients:


  • 1/2 kilo pork, cut into cubes
  • 1/4 kilo pork liver, cut into cubes
  • 1 cup potato, cut into strips (about 1/2 inch thick)
  • 1 cup carrtos, cut into strips (about 1/2 inch think)
  • 1/2 cup green peas
  • 1/2 cup bell pepper
  • 1 medium-sized onion, minced
  • 4 cloves garlic, minced
  • 2 pcs bay  leaf
  • 1/2 cup tomato sauce
  • salt and pepper to taste


Direction:

  1. Saute onion and garlic.
  2. Add pork and liver. Continue saute until meat turns brown.
  3. Drop in potato, carrots, bell pepper, green peas. Add about 1/2 cup water and simmer.
  4. When the vegetables are already cooked, add tomato sauce, bay leaf, and salt and pepper.
  5. Continue simmer until sauce thickens.
Serving size: 3-4
